If you’ve never had Alabama White BBQ Sauce, you’re missing out because it is excellent on chicken and pork!
White BBQ sauce originated in Alabama from Big Bob Gibson’s BBQ Restaurant in Decatur, Alabama. If you’ve ever heard of Chris Lilly, he’s the badass Pit Master at Big Bob Gibson’s who has won a ton of World Champion BBQ Competitions. Chris and the Big Bob Gibson family know good BBQ!
This sauce is a mayo base, mixed with white vinegar and horseradish, and a splash of hot sauce. I like to sometimes mix it up and use rice wine vinegar and wasabi, you can make it your own by using what you like. Unlike a lot of BBQ sauces which are full of sugar making them burn on the grill, this one is perfect for basting and it keeps the meat nice and moist!
Alabama White BBQ Sauce is super versatile as you can use it as marinade, baste, and then a dipping sauce for the wings in this recipe. Add a sprinkle of smoked paprika when you pull the chicken wings off the grill to add a nice color and then finish with a drizzle of the white sauce at the end for a stellar presentation.
I made these on my Green Mountain Grill Pellet Smoker, along with Fire Roasted Poblano Queso Dip and Atomic Buffalo Turds for an epic tailgating spread, perfect for the Big Game or any game day!

Description
Alabama White BBQ Sauce is the perfect sauce for Chicken wings, and the sauce can be used as a marinade, basete and as a final finishing sauce at the end.
Ingredients
- 1 ¾ cups mayonnaise
- ¾ cup distilled white vinegar
- ½ cup apple juice
- 2 tsp prepared horseradish
- 1 tbsp fresh grated black pepper
- Juice and zest of one lemon
- 1 tsp sea salt
- Dash cayenne pepper
- 1 tsp sugar
- Dash hot sauce
- Dash smoked paprika, plus more for serving.
Instructions
Sauce Directions:
Combine all ingredients in a pint sized mason jar, stir to combine, then shake to mix well. Can be stored in the refrigerator for up to 2 weeks.
Grilling Directions:
- Preheat your pellet smoker to 350. Let chicken wings cook for about 25 minutes, then crank the smoker to 400 to get crispy skin.
- Use a thermapen or an internal read thermometer (if you use the Green Mountain Grill it comes with its own thermometer and it will tell you! I love that about this grill!) to test internal temperature. Once the wings have reached an internal temperature of 170, pull them off the grill.
- Sprinkle with smoked paprika for color then drizzle with sauce before serving.
