Have you ever gotten confused standing at your meat counter? I’ve often asked myself, “What’s a Loin Chop? Or a Rib Chop Center?”. Understanding the nomenclature
for different cuts of meat as it varies by type can be confusing. The National Pork Board and the Beef Check off program conducted intensive research over an 18 month period and found that many people are confused by the different names of similar cuts meat and consequently didn’t know how to cook them properly.
Hence, the new Pork naming system in time for Grilling season! Things have gotten a lot less confusing! What is really cool about the renaming is that the names denote how you would cook a cut- for example, the the Loin Chop is now called the Porterhouse chop. And nothing says- “ready to be grilled” like “Porterhouse”!
