Hobo Packets are one of the easiest ways to put together a tasty dinner with very minimal fuss or clean up! That is why they are perfect for camping or even a quick yet tasty weeknight dinner? What is a hobo packet?

Essentially, a hobo packet is a foil packet filled with ingredients you cook over a campfire or grill. You chop up your favorite ingredients which could be a mix of diced veggies, potatoes and even instant cook rice and after about 20 minutes on the grill, you have a hot steamed dinner ready to go.

Campers have known about hobo packets for years, but did you know they are a SUPER easy way to do a quick dinner too? I paired Johnsonville beddar cheddar smoked sausage with poblano peppers, tri colored sweet peppers, and shallots together for a colorful addition to some quinoa. The smoked sausage is already cooked so you don’t have to worry about cook time on the grill which makes them pretty easy. These are so easy to do- get creative! If you are adding a starch like potatoes or sweet potatoes, remember to chop them up small enough that they will cook through when creating your steamer packets. I cooked a batch of quinoa up separately to serve with my peppers and sausage.

Get creative with your ingredients! AND, if you are pressed for time, you can always buy pre-chopped veggies to cut down on the prepwork!

Ingredients

  • 1 package Johnsonville Beddar Cheddar Smoked Sausage
  • 1 poblano pepper, chopped
  • 3 mini tri color peppers, chopped
  • 1 shallot, chopped
  • 2 tbsp water or wine
  • 1 cup quinoa, uncooked = 2 cups cooked. (Combine with 2 cups water, boil for about 20 minutes until tender and water has been absorbed).
  • Salt, pepper to taste

Instructions

Roll out 2 large squares of foil and double them up so you have a double thick packet. Add your ingredients and leave enough room on the sides to roll the foil packet up. Add the water so it can steam the ingredients in the packet and come together to form a sauce. Roll the foil packet together tightly together on all sides. Place the foil packet(s) directly on the coals or on the grill on direct heat and let grill for 15-20 minutes. If making hobo packets for a lot of people, let them create their own mix of veggies, etc and they can write their name on the packet before grilling.
