Why limit Planking to Salmon!?

People always think of using cedar planks for Salmon, but why limit planking to just Salmon? If you’ve been following me for a while, you know that I’m a big fan of cooking on wooden planks for all kinds of food, not just seafood, because plank cooking is an easy way to add smoke flavor, even if you don’t have a smoker! By cooking something directly on a wooden plank, you have the option to directly infuse that ingredient with smoke flavor, even if you do it in your oven! Yes, you can even make that cedar planked salmon (GASP) in your oven if the grill didn’t work out for you that night. Now that you know that, the possibilities are endless!

So let me encourage you to first think outside of the box by thinking about all the different dishes and ingredients you can infuse with smoke flavor by cooking over a plank! Then, take this a step further by thinking about the different wood and smoke profiles you can use to really amp up the flavor. Are you excited yet?

I have run my cedar planks through the dish washer a few times to get my money’s worth- you should be able to reuse your cedar planks a few times before you have to throw them out.

How to Grill Fish without it Falling Through the Grates? Use a plank!

A lot of people wonder how to cook fish on the grill without the fish filet falling through the grates? This is why planking is so amazing for grilling fish- it allows you to cook the fish on the grill while absorbing all that smoke flavor, while also eliminating the need to use a grill pan or a piece of foil. Planking has pretty much become my go-to method for grilling fish because it makes it so easy!

Sunshine State of Mind BBQ Rub

In this recipe, I grill the Mahi Mahi on a Cedar plank with a nice dose of my Sunshine State of Mind Craft BBQ Rub (USE CODE SUNSHINE for 5% OFF) then pair it with a coconut lime compound butter. My Sunshine State of Mind Craft BBQ Rub has a Kaffir lime base paired with Himalayan salt and granulated honey, making it the perfect topping for this Mahi. Cedar Planked Mahi Mahi with Coconut Lime Butter

Description

Take Grilled Mahi Mahi to the next level by cooking it over a cedar plank, sprinkled with Sunshine State of Mind Craft BBQ Rub, and paired with coconut lime butter. It's like taking a trip to the tropics!


Ingredients

Scale
  • 4 Mahi Mahi  filets, skins on (or flaky white fish)
  • 1 tbsp Sunshine State of Mind Craft BBQ Rub– divided among the 4 filets
  • 1 stick butter, room temperature
  • Zest and juice of one lime
  • 1 tbsp unsweetened coconut
  • ½ tsp salt

Instructions

  1. Soak planks for 30 minutes before using.
  2. Combine butter with lime juice, zest, coconut and salt. 
  3. Place mahi skin-side down on each plank. Smother the mahi mahi with the compound butter. 
  4. Next, preheat the grill to medium heat, about 400 degrees, creating direct and indirect zones. Place the planks on the indirect side and let the mahi cook on the grill until the internal temp reached 145 internal degrees at its thickest point, as measured by a meat thermometer.
  5. Serve immediately.
