If ever there was an easy recipe with STELLAR RESULTS I’ve put on this blog, it is  this mango lime grilled shrimp recipe! And the beauty of this recipe is that it really only needs 3 ingredients: shrimp, mango chutney, and limes!

My mango tree inspired this supremely addictive Floribbean take on Major Grey’s chutney.

 
If you’ve never heard of Major Grey’s Chutney, let me just tell you right now that it is a game changer. It is a sweet and savory chutney that is the best thing that has ever happened to any grilled protein. While I’m pairing this chutney with grilled shrimp, this mango chutney is freaking amazing with grilled pork chops, grilled pork tenderloin, and grilled chicken. Run, don’t walk to keep mango chutney as a pantry staple at your house! You will thank me later!

You will essentially take large peeled and deveined shrimp, toss them in salt, pepper and smoked paprika as a basic rub. Meanwhile, reduce down a jar of Major Grey’s Chutney with the zest and juice of three limes. Grill the shrimp until they turn pink and then pour the glaze over the shrimp.

Mango Lime Grilled Shrimp

Description

This super easy yet completely fantastic mango lime grilled shrimp recipe is a family favorite and can be made on the grill or on the stovetop in a pinch. Using only 3 ingredients: shrimp, mango chutney and limes, its an easy yet memorable dish.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 9 oz jar Major Grey's or Mango Chutney
  • the juice and zest (the zest is the most important part!) of 3 large Persian Limes
  • 1 tsp sea salt
  • t tsp smoked paprika (optional)
  • 1/2 tsp pepper (or to taste)
  • 1 tbsp olive oil

Instructions

Preheat your grill for 350 degrees, cooking the shrimp over direct heat. While the grill is heating up, in a large bowl add your shrimp, and then your salt, pepper and smoked paprika. Put the shrimp on bamboo skewers or place in a grill pan for cooking over the grill. Larger shrimp, such as XL shrimp, can be grilled directly over the grates.

Before throwing the shrimp on the grill, reduce the mango chutney in a saucepan with the lime juice and zest and let it go to a light simmer and reduce for 5 minutes and then remove from heat. Don't overcook the glaze or it will become too thick.

Grill the shrimp until they turn pink, about 2 minutes per side, being careful not to overcook.

Pull the shrimp off the grill and drizzle with the mango lime chutney. This mango lime chutney is great served on leftovers, on rice, and with cream cheese and crackers. Goes well with coconut rice!
