I was looking to do something a little exotic for Valentine’s Day this year and when I saw the Calamari in the seafood department at Whole Foods I thought- what the heck? These were super easy to make- I bought the squid in tubes and then sliced them into rings. Then I put them on skewers. I grilled them, alongside a few lemons (the grilled lemons make for a nice presentation), until they read 145 degrees with an internal read digital thermometer (I recommend the Thermapen). These took less than 10 minutes on the grill to turn opaque white, I then finished them lemon juice, a little lemon zest, sea salt and fresh ground pepper. That’s it- easy peasy! Love that photo Robyn. I’ve never ever grabbed calamari at the market because the only thing I know to do with it is bread and fry, and I best leave that to the restaurant experts. 🙂 Thanks for this recipe, I’ll give it a try.
Lea Ann- I’m with you, I never fry anything except the occasional pan fried pork chop. This recipe is REALLY easy to prepare and grill and will make you think differently about calamari!
please – please – please DO NOT bread and or fry calamari….. a quick saute or grill and serve with olives, capers and sardines / smelt…… oil and vinegar dressing lightly tossed—– top with your choice of cheese…… and a good crusty bread…….. michael
