Grilled calamari is an easy to make, crowd pleasing appetizer.

I was looking to do something a little exotic for Valentine’s Day this year and when I saw the Calamari in the seafood department at Whole Foods I thought- what the heck? These were super easy to make- I bought the squid in tubes and then sliced them into rings. Then I put them on skewers. I grilled them, alongside a few lemons (the grilled lemons make for a nice presentation), until they read 145 degrees with an internal read digital thermometer (I recommend the Thermapen). These took less than 10 minutes on the grill to turn opaque white, I then finished them lemon juice, a little lemon zest, sea salt and fresh ground pepper. That’s it- easy peasy!
