If you are looking for a great Einkorn Pizza Dough recipe, well you are in luck, I snagged this off the back of the Jovial Food Einkorn package and this recipe was a winner!

I have trouble digesting wheat for the most part. So even though I love pizza in all shapes and sizes, it does not love me back. I’ve tried gluten-free flours made of rice and tapioca flour and it never bakes the same as regular flour. I’ve also discovered in my research on glyphosate that is it often the gluten-free products that have the highest levels of glyphosate! UGH! 

But I refuse to give up pizza for the rest of my life, so I tried Einkorn Flour to make my own pizza dough — and I am never turning back.

What is Einkorn flour?

I recently discovered Einkorn flour and was amazed that with the “gluten-intolerant and gluten-free” crazes in food that it is not being discussed more often! It is essentially the world’s oldest wheat. Unlike modern wheat, it has not been hybridized. It’s also 100% organic! According to the Jovial website (they are the company responsible for bringing back Einkorn flour):

Made from nature’s original wheat, einkorn has remained untouched by modern hybridization and large-scale agriculture for 12,000 years. Einkorn is fast becoming the wheat of choice for the gluten sensitive due to its very weak gluten”.

I made my own dough using Einkorn flour, the original, unhybridized wheat.

 

Is Einkorn flour heathy?

Einkorn flour is higher in protein, B vitamins, carotenoids, and essential and trace minerals, while also being lower in starch and carbohydrates. Keep in mind that it still contains gluten, but a much weaker gluten than modern wheat. That means it is not suitable for those with Celiac disease, as it still has gluten. However, it is much easier to digest than modern wheat while also being much more nutritious! After cutting out gluten for a long time, I have to say hearing about Einkorn flour was music to my ears.

After making this Einkorn flour pizza dough from scratch, I have to say this was the best pizza dough I have ever made. And I have made a LOOOOOOT of pizza dough in my life. And after eating this pizza, I was able to easily digest it without being super bloated like I normally am after eating regular wheat.

So, in summary, if you don’t tolerate wheat very well or want a more nutritious alternative without sacrificing flavor, then Einkorn is the flour for you. Homemade Pizza Dough with Einkorn Flour

Description

Have a sensitivity to gluten? You don't have to give up your slices of pizza — try out this homemade pizza dough recipe using Einkorn flour.


Ingredients

Scale
  • 1 1/4 cup warm water
  • 1 tsp. dry active yeast
  • 1 tsp. sugar
  • 5 cups all purpose Einkorn flour, plus more for dusting
  • 2 tsp .sea salt
  • 3 tbsp. (organic) extra virgin oil

Instructions

  1. In a large bow, mix together the water, yeast, sugar, and 1 cup (120 g) of the flour. Let stand for 15 minutes.
  2. Add the remaining 4 cups (480 g) of flour and salt, then mix together as much as you can with a silf spatula or dough attachment on a food processor.
  3. Add the oil and begin kneading the dough in the bowl until it holds together.
  4. Lightly flour a work surface. Turn out the dough and knead for 2 to 3 minutes.
  5. Place the dough back in the bowl and cover tightly with plastic wrap. Let rest for 2 hours at room temperature.
