Living in South Florida for the past 10 years, I’ve learned a thing or two about Cuban food. Mojo (Pronounced “Mo-ho” not “Mo-joe”) Criollo is a staple in Latin cooking. It is usually made with Sour Orange Juice, or “naranja agria” as found in most Latin grocery stores, but this recipe calls for equal parts of orange juice and lime juice instead. This marinade is super versatile for pork and chicken and also great as a dipping sauce on plantain chips.

This recipe can be thrown together in a flash in your crockpot or instantpot and 4 hours later you have delicious authentic Cuban Pork that goes well with black beans and rice! To keep it low carb, paleo and keto friendly pair it with cauliflower rice instead. I like to garnish with avocado and a dash or hot sauce. Pour additional marinade from the crockpot over the pork at the end for extra flavor!

Cuban Mojo Pork with Coconut Rice and Black Beans

Description

The Garlicky citrus flavors of Mojo Criollo are the perfect complement to Pork Roast in this dish that is easily made in the crockpot or instantpot.


Ingredients

Plus

  • 1/2 cup orange juice
  • 1/2 cup lime juice
  • 1/3 cup olive oil
  • 2 tbsp fresh oregano
  • 1 garlic head, outerskin removed
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp fresh ground pepper

If you are pairing with Rice and Beans:

Coconut Rice ingredients:

  • 2 cups jasmine rice
  • 2 cans of coconut milk full fat, to produce 1.5 cups coconut cream
  • 1.5 tbsp sugar
  • 1 tsp sea salt
  • 1.5 cups water

AND:

  • 2 (15 oz.) cans of seasoned black beans

Garnish:

  • 1 Avocado, diced

Instructions

Combine all of the Mojo Criollo ingredients in the crockpot and stir. Next, add the Smithfield Homestyle Marinated Fresh Pork Roast and close the lid to your crockpot, setting it to high heat. Let the pork cook on high heat for 4 hours, after 4 hours it can be easily shredded with a fork.

During the last hour of cooking the pork, start working on the rice.

Before embarking on making this rice dish, you will need to refrigerate the 2 cans of coconut milk in the fridge an hour before preparing. This is to make it easy to scoop the thick coconut “cream” off the top to use for this recipe. The remaining coconut milk/water can be used in other recipes.

Combine the rice, the 1.5 cups coconut cream, sugar, salt and water in a saucepan. Stir briefly to combine the sugar, rice and coconut cream. Bring to a boil, then cover and let simmer on low heat for 40 minutes or until the liquid is absorbed. Turn off the burner and fluff the rice with a fork, let it sit covered for another 20 minutes to continue to steam. While the rice is simmering, heat the black beans in another pot to warm for 10 minutes.

Serve the rice with beans, and to with shredded Mojo pork. Garnish with diced avocado and drizzle with additional Mojo sauce from the crockpot. This is an awesome, hearty dish that is easy to make and feeds a crowd!
