If you love a good churro, then you will love this Grilled Churro French Toast recipe because it gives a nice dose of cinnamon sugar in a supremely satisfying crunchy outside with a pillowy soft inner layer made in the traditional Brazilian French Toast style (aka Rabanada). This French Toast Recipe has Spanish and Portuguese Roots because Rabanada, aka Brazilian French Toast, has Spanish and Portuguese roots and is also known as Spanish Fried Bread.

And, let us not forget that the Churro, a tasty Fried Pastry dipped in Cinnamon Sugar, ALSO has Spanish and Mexican roots.

You’ll find that Rabanada, aka Brazilian French Toast, is a Christmas time staple that is often served as a dessert, while in Spain their version of Spanish Fried bread is traditionally eaten during the Holy week before Easter.

Regardless of when or how you enjoy this dish- one thing we can all agree on is that it is Delicious and perfect for an outdoor brunch on your flattop grill paired with a bloody mary or mimosa. 

 

How This Churro French Toast is Different Than Traditional French Toast

In American French Toast, you soak your bread in an egg/milk mixture and grill it up in a skillet. In this Churro French toast, aka Rabanada, you first soak your day-old stale bread in a milk mixture and then, right before grilling or putting into a skillet, you dip in the egg mixture. This allows the milk mixture to permeate the bread and create a soft pillowy texture on the inside, while the egg creates a crispy outer exterior that is then pan fried in oil and dipped into cinnamon sugar. The result is French Toast that is crispy on the outside with a nice cinnamon sugar finish on the outside, and a custardy inside that is a nice  pillowy soft contrast to the outer crunchy layer. In summary, it tastes like French toast heaven. 

In this rendition, I add Triple Sec to the milk mixture to add a boozy citrus infused inner layer to this Churro French Toast that has you begging for more. And for this reason I recommend everyone make this dish for their mom on Mother’s Day because, well, Mom deserves this kind of dessert for breakfast dish because it’s her one day of the year to enjoy this kind of sugar and carb extravagance so go all out!

Lastly, I make this dish on my flattop grill. You can choose to make this dish in a skillet in your kitchen but grilled french toast is a great dish to make on a flat top griddle like the Loco Cooker and you have such a large cooking surface that you can fry up some bacon, sausage and eggs at the same time.

Ingredients for this Boozy Grilled Churro French Toast

 

  • One large loaf (organic) STALE DAY OLD sourdough bread or 2 French Baguettes – I used Publix Take and Bake Sourdough Loaf (try to use Organic when you can find it to avoid glyphosate at all cost)
  • 2 cups whole milk
  • 1 tbsp pure vanilla extract
  • 1 tbsp triple sec
  • 1 tbsp orange zest
  • 4 eggs, slightly beaten
  • 2-3 tbsp coconut oil 
  • ½ cup sugar (coconut sugar would a healthier option)
  • 1 tbsp ground cinnamon
  • ½ cup maple syrup or honey

 

How to Make this Boozy Grilled French Toast

In this Brazilian French Toast, what I’m calling “Churro French Toast” because of the crispy delicious cinnamon sugar coating, you will be frying the bread in oil on a flattop griddle or skillet versus the traditional pan fry technique of American French Toast.

Soaking day old bread in the milk, triple sec, zest mixture makes for a pillowy soft interior of this Brazilian French Toast that is fried with a crunchy exterior.

 

  1. Mix the milk, vanilla and triple sec and orange zest.
  2. In a separate bowl, lightly beat the eggs.
  3. Slice the bread in ¾” thick slices. 
  4. Soak the bread in the milk mixture for about 8-10 minutes. 
  5. Heat your griddle to medium high and add your coconut oil and get ready to fry the bread.
  6. After soaking in the milk mixture, gently pick up the the bread and dip into the egg mixture.
  7. Dip the bread in the egg mixture and then place on the griddle and let cook on one side until nice and golden brown. Repeat on the other side. 
  8. Line a plate with paper towels and place bread slices on the paper towels after you pull them off the griddle.
  9. Combine the cinnamon and sugar and dip each piece piece of bread into the cinnamon sugar mix- this is what makes the Fried French Toast taste like a churro!
  10. Serve with honey or maple syrup- enjoy!

Substitutions and Variations for this Churro French Toast

You can always substitute this recipe for my traditional GRILLED french toast recipe, but trust me when I tell you, this Brazilian style of French Toast yields a totally different texture that offers a pillowy inside with a crunchy outside- it’s simply delish!

Bread: You can also play around with different types of bread for this Churro French Toast: Challah, Brioche, SourDough AND if you are Gluten Free, by all means use Gluten Free bread. I ALWAYS try to use Organic bread whenever possible because all grains are sprayed with glyphosate as a dessicant when being harvested. 

Booze: If you don’t have triple sec, a splash of orange juice, cointreau, grand marnier or orange curacao can all be substituted

Sugar: Unbleached or coconut sugar can be swapped for white sugar. I always opt for organic sugar

The bread will become very delicate after soaking in the milk mixture, be extra careful when you remove from the milk and place in the beaten egg mixture.

Make sure that you have a generous amount of oil in your pan or on your griddle as you will be frying the bread to get the right texture and get a crispy outside.
