Shrimp cauliflower fried rice is a low carb, grain free and super delicious alternative to traditional fried rice. This dish replaces white rice with cauliflower rice, which is lower in calories, carbs, and high in fiber. Shrimp is added as a source of protein and flavor, and various vegetables such as carrots, peas, and green onions are included to make this a true “fried rice”, but with Cauliflower.
This recipe is so easy because it pairs frozen (organic) cauliflower rice, organic frozen vegetables, Japanese BBQ sauce and Shrimp in one dish that requires literally zero prep, is family friendly and doesn’t taste Healthy while being low carb and good for you.
When I originally developed this recipe to be made on the Loco Flat Top Grill for my Women’s Grilling Clinic, this is the dish that everyone was raving about- and it was the one that went from frozen to cooked in less than 20 minutes and took the least amount of prep! my 7 year old loves this dish so let that be a testament to the kid-friendly nature of this dish- it is the one vegetable dish I can get him to eat!
If you are on a low carb, grain free, atkins or keto diet this dish should be in your repertoire. The only thing in this dish that could potentially have sugar in it is Japanese BBQ sauce which can easily be swapped with coconut aminos or soy sauce. We eat this as a main dish but this would make a wonderful low carb side dish to have on hand as well and you could easily omit the shrimp if serving as a side dish.
Shrimp Cauliflower Fried Rice Ingredients:
- 2 garlic cloves, minced
- 1 tsp grated ginger (optional but adds great flavor)
- 2 tbsp butter
- (2) 10 oz Frozen cauliflower rice (preferably organic)
- One 10 oz bag of (organic) frozen mixed stir fry veggies (carrots, peas, onions)
- 1 lb shrimp deveined with shells removed
- 4 eggs, beaten and ready to pour on griddle.
- 1 bottle Japanese BBQ Sauce- I prefer Bachan’s
- Green onions, for garnish
How to make Shrimp Cauliflower Fried Rice:
Heat your Loco Cooker to Sear on all burners to get the grill nice and hot OR heat your grill attached with GRILLGRATES GRIDDLE to high to get your grill nice and hot. Add your butter and let it melt. Turn your grill down to high and add your garlic and saute it for one minute. Next, add your cauliflower rice and veggies. Spread the rice and veg out so it can cook and begin to get crispy edges on the griddle. Next, add a generous splash of your Japanese BBQ Sauce and mix it into the cauliflower rice and veggies. Next, pour your eggs onto the griddle and let them cook and then mix into the Rice. Finally, add your shrimp and let cook until they turn pink and are cooked through, this should only take a few minutes. Combine the ingredients in a large bowl, add one last drizzle of Japanese BBQ Sauce, and then garnish with chopped green onions.
