A few months ago my husband and I did a 21 day fast in which we excluded sugar, dairy, meat and gluten’s from our diet. It was a challenge but I have to say we felt healthier afterwards.

This Orange Peanut-Miso Dressing was one of our favorite salad dressings we had during our fast. We’ve had it several times after our fast and now we use it as a dipping sauce as well.

It’s great over grilled veggies, as a dipping sauce for chicken skewers and so much more!

Ingredients

Scale

1 1-inch piece of fresh peeled ginger
1 tablespoons lime juice
3 tablespoons fresh orange juice
1½ tablespoons white miso paste
½ teaspoon minced garlic
¼ teaspoon salt
2 heaping tablespoon of all natural peanut butter (I suggest starting with 1 tbsp. and work your way up it really depends on how much peanut flavor you like)
