Strawberry & Honeydew Mojito is the perfect cocktail for entertaining, you can easily prep a pitcher (or 2) before your guests arrive and leave cooling in the fridge.

If I had to choose a favorite summer cocktail it would be the mojito. It’s simple to make, it’s versatile and by just switching up a few ingredients you have a completely different flavor.

Make these ahead of time by the pitcher the longer it sits the better it tastes!

Summer Cocktail: Strawberry & Honeydew Mojito

Ingredients

Scale
  • Juice of 2 limes cut into quarters {seeds removed}
  • 812 strawberries
  • 34 honeydew wedges cut in cubes
  • 1 1/2 cups of white rum
  • 7 cups of club soda
  • 1/2 cup of fresh mint
  • 1/2 cup of granulated sugar
  • Additional lime, strawberries, and mint, for garnish

Instructions

  1. Boil 1/2 cup water + dissolve the sugar stirring slowly to make the simple syrup. Set aside and let cool. In a blender add your honeydew and about 1 tsp of the simple syrup and pulse until it's a liquid consistency – you might need to add some more simple syrup so it can blend properly.
  2. Using a muddler or wooden spoon mash the strawberries and mint leaves in the bottom of your pitcher, add the liquefied honeydew. Add in the lime juice and rum and 1/4 cup of simple syrup {can add more if you want it sweeter taste test it first}.
  3. Right before serving pour in the club soda.Gently stir to combine and pour over iced glasses and garnish with fresh mint sprigs, lime and strawberries if you'd like.

There is nothing like a nice refreshing cocktail to cool things off during a cookout.
