Just when I'm recovering from the Holidays and on a good path to getting rid of my muffin top, the SuperBowl comes around. And of course I must gorge myself on finger foods as there is nothing quite as satisfying as eating finger food. Luckily, many of these recipes are low carb, paleo, or even atkins friendly so most of the damage you'll do to your diet is from the large amount of beer you'll be drinking! The grilled veggies add a little smokiness and char to this kick ass veggie chili. You can easily add your own meat to this recipe, but the flavors stand on their own without it.
