I love biscuits so much. In fact, growing up in the South, I didn’t realize it was even a thing. But until I got out of the South, I didn’t realize how blessed we are with our awesome food. These days, Southern food can be found almost anywhere because of its growing popularity. Hell, you can even get a biscuit in Brooklyn these days!!

But alas, I live in South Florida where it is always bikini season and usually reserve my empty carbs for a glass of wine or two. I pretty much eat low carb or no carb (usually Ketogenic most of the time with Paleo on the weekends) but there are sometimes I just go into Biscuit obsession, and it usually when I am stressed. Something about biscuits hot out of the oven is just oh-so-comforting. And needless to say, the past few months have been quite crazy. Or maybe that is just the norm, I am not sure!

And on a side note dear blog, I want to apologize to you for being so absent lately. It seems that being GrillGirl has created all these fun projects, but on top of working full time and being a mom, all of this has left no time for you!

So, alas, I have been baking biscuits lately because life is stressful and biscuits make me happy. If you look at all my biscuit recipes on here, I can guarantee that I was going through something when I posted the recipe! Just check out my paleo drop biscuits and you’ll see!

Carbquick details

Anyway, so these biscuits are made from a low carb flour I discovered on the interweb called Carbquick. I had low expectations when I ordered the flour on Amazon, but damn did it exceed them! I honestly cannot tell that they are low carb! They make amazing biscuits!

You will see that the flour itself only has 2grams of Net Carbs, because it is extremely high in fiber. The only downside of this flour is that it doesn’t appear to be gluten free, but it’s pretty damn good and I’m more worried about the carbs when I eat the occasional biscuit (or the entire batch, it just depends on how the rough the day has been!)

So, you can thank me for introducing you to Carbquick and these easy peasy (and amazing) drop biscuits because they are going to blow your mind! And you don’t have to feel guilty about them!

I must also note that I made an excellent batch of rosemary parmesan biscuits from this flour that I will also share soon!

Low Carb Drop Biscuits (That Don't Taste Low Carb!)

  • Yield: 6-8 biscuits 1x

Ingredients

Scale
  • 2 cups Carbquick
  • 2/3 cups water (or as needed for a smooth, firm consistency)

Instructions

Preheat oven to 350. Using a mixer or with a fork, gradually add the water to the flour and mix until uniformly combined. Spoon approximately 1 heaping tbsp. of the mixture onto a parchment lined cookie sheet. Bake 10-12 minutes OR until golden brown. Serve piping hot with a nice slather of butter!
