Smoked Lamb Sliders with Whipped Feta

Ingredients

Lamb Sliders:

  • 1 pound ground American lamb
  • 2 small eggs lightly beaten
  • 3 cloves garlic minced
  • 1 ½ Tablespoons Lebanese 7 Spice Blend*
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground pepper
  • 3 Tablespoons panko breadcrumbs
  • 1 Tablespoon lemon juice and zest
  • 2 Tablespoons unsalted butter
  • 3 Tablespoons extra virgin olive oil

Whipped Feta:

  • 8 ounces feta cheese crumbled*
  • ¾ cup whole milk plain Greek yogurt
  • 2 Tablespoons olive oil
  • 2 Tablespoons fresh lemon juice and zest
  • 2 garlic cloves

Instructions

Prepare the Sliders:

  • Combine the lamb, eggs, garlic, spice blend, salt, pepper, panko, lemon juice, lemon zest, butter, and oil in a bowl.
    1 pound ground American lamb, 2 small eggs, 3 cloves garlic, 1 ½ Tablespoons Lebanese 7 Spice Blend*, 1 teaspoon kosher salt, ½ teaspoon freshly ground pepper, 3 Tablespoons panko breadcrumbs, 1 Tablespoon lemon juice and zest, 2 Tablespoons unsalted butter, 3 Tablespoons extra virgin olive oil
  • Portion the meat mixture into 12 to 14 equal-sized balls, rolling them between two palms.
  • Place the meatballs on a wire tray or a frog mat.

Make the Whipped Feta:

  • Add all the ingredients to a food processor.
    8 ounces feta cheese, ¾ cup whole milk plain Greek yogurt, 2 Tablespoons olive oil, 2 Tablespoons fresh lemon juice and zest, 2 garlic cloves
  • Blend until smooth and creamy, scraping down the sides as needed.
  • Transfer the feta mixture to the fridge to chill while cooking the sliders.

Cook the Sliders:

  • Set a smoker to 250F, and add wood chips to create smoke.
  • Place the meatballs in the smoker on indirect heat, and let them smoke until they reach an internal temperature of 160F.
  • Remove from the smoker, and set aside to rest.

Assemble:

  • Spread a layer of whipped feta on one bun. Then, add a smoked meatball, more whipped feta, pickled onions, and pomegranate molasses, and finish with a second.

Storage: Store the slider patties in an airtight container in the fridge for 3-4 days. Keep the whipped feta in a separate airtight container in the fridge for up to 1 week.
