An easy chaffle recipe to have in your recipe repertoire so you can stay low carb but still enjoy a sandwich! The Chaffle, essentially a grain free waffle made with egg, cheese and grain free almond flour, is the perfect bread alternative that makes it easy to repurpose all that smoked and grilled meat into sandwiches while keeping it low carb.
- 1 large egg
- 1/2 cup shredded mozzarella
- 1 tbsb blanched almond flour
- ¼ tsp baking powder
- Whisk together egg, almond flour, and baking powder. Stir in mozzarella cheese and set batter aside.
- Step 2
Preheat a waffle iron according to its waffle settings.
Spray both sides of the preheated waffle iron with cooking spray or coat with coconut oil. Pour 1/2 of the batter onto the waffle iron and spread it out from the center with a spoon. Close the waffle iron and let the waffle cook until done- about 3 minutes. Waffle is done once you can easily remove it from the waffle iron. Repeat with remaining batter. Allow chaffles to cool for 2 to 3 minutes, and they will begin to crisp up.
