Fire Roasted Tomato Salsa on the Grill

Description

Throw your veggies on the grill and make fire roasted salsa- an amplified version of traditional tomato salsa that gets a boost of flavor from char and smoke from a charcoal grill.


Ingredients

Scale
  • 5 vine tomatoes
  • 2 jalapeños
  • 1 head of garlic
  • 5 cambray onions or one large red onion, sliced into rings
  • 1/2 bunch of cilantro
  • 1 tbsp. lemon juice
  • 1/4 tsp. cumin
  • 1/2 tsp. dried oregano
  • Sea salt and pepper to taste

Instructions

  1. Heat a charcoal grill up and get it to about 400 degrees. This is not an exact science but get your coals nice and hot so you can char your veggies.
  2. Grill the vegetables until blackened on all sides, 10 to 15 per side.
  3. Transfer vegetables to a blender or food processor pulse once for a chunky consistency, or three times for a purée consistency.
  4. Transfer to a salsa bowl. Add the cumin, oregano, chopped cilantro, lime juice and season with salt and pepper to taste.
  5. Give everything a stir and enjoy!
