Sunshine State of Mind Citrus Grilled Mahi Mahi

Luckily, you can find frozen mahi mahi just about anywhere, making it easy to grill mahi mahi no matter where you live! And if you need help with how to thaw frozen fish properly before grilling, I’ve got you covered with some simple steps.
Where is Mahi Mahi Caught?
Mahi Mahi, also known as “Dolphinfish” and “dorado” live in tropical and sub tropical waters, and are commonly found around the Caribbean, The Atlantic Coast of Florida, The Gulf Coast, Off the coast of Hawaii, and many other temperate, tropical and subtropical waters worldwide.
Best Way to Cook Mahi Mahi on the Grill
Mahi Mahi is a meaty white fish that stands up well to grilling. My favorite way to make mahi mahi on the grill is on a cedar plank (here is my recipe for Cedar Planked Mahi Mahi with Coconut Lime Butter ) or on a bed of citrus to impart flavor, as seen here, which also gives a nice barrier on the grill so you can ensure the fish holds up on the grill.
Citrus Grilled Mahi Mahi
Citrus is the go-to complement pairing for fish, so why not grill fish on a bed of lemons, limes, grapefruit or oranges? By slicing the citrus in ¼” inch thick slices, you provide a great aromatic plank to cook the fish on. The citrus protects the fish from the grill so it has no chance of sticking to the grill grates, while imparting the fish with aromatic flavor while grilling. You simply put a layer of the citrus on the grill and place the mahi mahi over the citrus, letting the fish cook until it reaches an internal temperature of 145 degrees. I alway use a Thermapen, an instant read digital thermometer, to get an accurate temperature reading.

Description
Mahi Mahi on the grill is super easy with this citrus plank technique! Simply slice citrus in 1/4″ inch thick slices, layer on the grill, and grill the mahi mahi until the internal temperature reads 145 degrees with a Thermapen.
Ingredients
4 Mahi Mahi filets
2 large oranges, 3 lemons, or 2 grapefruit, cut into 1/4 inch thick slices.
1–2 tbsp Sunshine State of Mind Craft BBQ Rub, or your preferred rub
2 tbsp butter
Instructions
Preheat your grill for medium direct heat. Meanwhile, slice your citrus. Next, place one pat of butter on each filet, approximately half a tbsp of butter. Add a generous amount of rub per filet, approximately 1-2 teaspoons per filet, (depending on size of filet add more/less).
Using tongs, layer the lemon slices on the grill to make a grilling plank/platform for the fish. Place the fish on the citrus and let it grill until the internal temp reaches 145 internal degrees as read by the Thermapen. Remove and serve immediately. This recipe pairs PERFECTLY with my Charleston Style Coleslaw.
