Quick and Delicious Shrimp Cauliflower Rice – easy skillet or flat top grill recipe

Description

Shrimp cauliflower fried rice is an easy, weeknight pantry staple dish that is a big hit with kids and adults alike and doesn’t taste the least bit healthy! This dish can be made in a skillet OR on a flat top grill like the Loco flat top grill, making it a fun hibachi style dish to make with the family.  By using basic pantry staple items like frozen cauliflower rice and veggies, eggs, Japanese BBQ Sauce and peeled and deveined shrimp, you can pull together an easy weeknight meal in under 20 minutes!


Ingredients

  • 2 garlic cloves, minced
  • 1 tsp grated ginger (optional but adds great flavor)
  • 2 tbsp butter
  • (2) 10 oz Frozen cauliflower rice (preferably organic)
  • One 10 oz bag of (organic) frozen mixed stir fry veggies (carrots, peas, onions)
  • 1 lb shrimp deveined with shells removed 
  • 4 eggs, beaten and ready to pour on griddle.
  • 1 bottle Japanese BBQ Sauce- I prefer Bachan’s
  • Green onions, for garnish

Instructions

Heat your Loco Cooker to Sear  on all burners to get the grill nice and hot OR  heat your grill attached with GRILLGRATES GRIDDLE to high to get your grill nice and hot. Add your butter and let it melt. Turn your grill down to high and add your garlic and saute it for one minute. Next, add your cauliflower rice and veggies. Spread the rice and veg out so it can cook and begin to get crispy edges on the griddle. Next, add a generous splash of your Japanese BBQ Sauce and mix it into the cauliflower rice and veggies. Next, pour your eggs onto the griddle and let them cook and then mix into the Rice. Finally, add your shrimp and let cook until they turn pink and are cooked through, this should only take a few minutes. Combine the ingredients in a large bowl, add one last drizzle of Japanese BBQ Sauce, and then garnish with chopped green onions. Prepare to be amazed at how much people love this recipe without knowing it is healthy and low carb!
