You guys know the #1 tool I recommend to make everyone a better griller is a meat thermometer so I’m super excited to announce I’ve launched my own LIMITED EDITION GRILLGIRL Teal Digital Meat Thermometer! I’ve only made a small batch of these so get yours before the’yre gone! They make the perfect gift for the teal loving foodie in your life!
Now, Lets cover some basics:
Why Do You Need to Use a Meat Thermometer When Cooking Meat?
There are few things that can quickly change the trajectory of your cooking success as quickly as using a meat thermometer. Not just on the grill, but in the kitchen too! Have you ever been to a friend’s house and they served you hockey puck burgers and “rubber chicken”? You can easily eliminate “rubber chicken syndrome” by knowing the proper minimal internal temp to cook anything and then using a meat thermometer to ensure you’ve reached that temp. Once you’ve reached that internal temp (place your thermometer in the meat, being careful not to hit bone or fat to get an accurate temp), pull that meat off! Congrats- you’ve now made yourself a better cook by taking the guesswork out of cooking.
Overcooked and undercooked meats are a thing of the past because once you know you’ve hit that minimal internal temp in your meat using a Meat Thermometer, you can feel confident serving moist, juicy meat that is perfectly cooked every time.
Many recipes will tell you to cook based on time. This is wrong. Temperature, never time, should always be your guide in cooking meat. Because all ovens, grills and cooking devices will vary, temperature is your “North Star” in the world of cooking. Let Temp be your guide in all things related to meat and this will ensure success every time.
And keep in mind that the meat will continue to cook after you take it off the grill, ie, “carry-over cooking”, so it is okay to take it off a few degrees under your target temp as it will continue to cook. For example, when I cook a steak, I pull it at 125* which is medium rare, but by the time it has rested for 10 minutes under foil to let the juices redistribute, it is a perfect medium rare when I go to serve it.
After you’ve hit the proper internal temp, pull that meat off the grill/skillet/oven and let it rest for 10 minutes before serving so the juices can reabsorb. Now, serve your sexy steak (or fill in the blanks here with your favorite protein here) with confidence and wait for the compliments to pour in!
And, if you are looking for an easy yet delicious way to make all meats and veggies shine, my Sunshine State of Mind ALL PURPOSE craft BBQ Rub is the ticket! Add to all meats, veggies, and even as a rimmer to your cocktails and you’ll discover why fan’s say it “tastes like happiness”.
