If you love blue cheese burgers, well hold my beer because this blue cheese smash burger wedge salad combo is about to take your love for blue cheese burgers to the next level! Because what do you get when you pair a blue cheese SMASH BURGER with a Wedge Salad? You get perfection on a plate. All the flavor of a perfectly cooked Smash burger with crispy edges, cooked in butter, stacked on top of a wedge salad made with homemade blue cheese dressing and lots of bacon. And guess what, no carbs! Because why bother with a bun when the real hero is that blue cheese smash burger and that wedge salad smothered in blue cheese creaminess.

This is THE recipe for BLUE CHEESE LOVERS! Blue Cheese Burgers on Steroids! 

 

If you LOVE blue cheese, and I mean really love blue cheese, this recipe is for you. Because it highlights blue cheese in all its glory in two different ways, in a large chunk slightly melted on the Blue Cheese Burgers, and in an epic homemade creamy dressing made with a few simple ingredients.

The best meals start with high quality ingredients- look for organic and seed-oil free (no canola, soybean, vegetable oil! in your mayo and dressings!).

 

Ingredients: QUALITY matters in all things, ESPECIALLY YOUR FOOD

Butter: for cooking your smash burgers- opt for organic whenever possible. (I realize organic butter is currently SO pricey right now, but fat is where toxins collect in animals and you don’t want to ingest things like glyphosate and other yucks in your butter)

Ground Chuck: (organic) Grass Fed beef is your friend. Again, I realize opting for organic is more expensive, especially when we are already crunched with inflation and rising food costs but trust me, when you realize what they feed these cows, you want to eat organic. Because you are what you eat and if the cows eat glyphosate (round up)  in their GMO corn grain that is finished with GMO as a dessicant (did you know they spray grains like oats and wheat with round up before they harvest them to make them easier to harvest?) then you eat it too. My grocery store often runs specials on grassfed beef and I stock up and put them in the freezer when they do. I order my meat from Sustainable Moink- the Sustainable Meat Delivery Subscription box, You can also find good deals at places like Trader Joes, or order organic ground beef online from Greensbury Market.

Blue Cheese: I opt for organic when I can. Trader Joes has a great options for Blue cheese. Blue cheese is often made with raw milk which is actually better for you than pasteurized cheese. The more you know!

Nitrate Free Bacon: It is hard to find organic bacon, but these days it is NOT hard to find NITRATE FREE bacon. Why nitrate free? Well, nitrate is a curing agent but studies have found that when it combines with your stomach acid it turns into a cancer causing compound so you want t0 avoid this at all costs. Nitrates are found in things like deli meats, sausages and cured foods like salami, pepperoni, snack sticks…. These days, it is easy to find nitrate free products as they often cure them with celery salt which has naturally occurring nitrates.

Pickle Juice: I love pickle juice to put in ALL the things: I like to add a splash to my Alabama White Sauce, in my homemade pimento cheese recipe, and as a brine for Turkey and Chicken (check out my Pickle Juice Brined Spatchcocked Turkey Recipe)! Yes, as a brine for your poultry! This is what Chick-fil-a does and it’s soo good! (make sure to use pickles/pickle juice without polysorbate 80. Why? Polysorbate is a preservative found in many things like pickle juice that has been shown to cause cancer so read your labels!)

How to Make and Assemble The Blue Cheese Smash Burgers Wedge Salad

  1. Make your homemade blue cheese dressing before you start your burgers and and let it hang in the fridge until you are ready to use.
  2. Mix your ground chuck, The W Sauce Worcestershire Sauce, butter, salt and pepper to make smash burgers. Before you start frying your burgers, cook your bacon in the microwave or oven to have ready for your salad. Next, Heat a cast iron pan to medium high heat, coat the pan with butter and place a handful of meat, not in a patty but loosely together, on the pan and smash with a spatula to get crispy edges. Flip after a minute and then add your Blue Cheese.
  3. Assemble the Wedge: Slice a head of iceberg into quarters. Put on a plate and layer on the Blue cheese dressing, cherry tomatoes, bacon and then finally your Smash burger. You can also add more chunks of blue cheese at this time if you so desire. Take one of your steak knives and use it to secure the smash burger to the wedge.

Description

Blue cheese smash burgers gloriously adorn a classic wedge salad for the perfect low carb burger and salad combo. If you love Blue cheese and blue cheese burgers, this recipe is for you!


Ingredients

Scale

Blue Cheese Dressing:

  • ½ cup blue cheese
  • ½ cup sour cream
  • Dash ground garlic or 1 clove smashed garlic
  • ¼ cup Mayo (look for mayo made without seed oils)
  • 1 tbsp pickle juice
  • Freshly ground sea salt, pepper to taste
  • Combine with a fork break up large chunks of cheese. 

Blue Cheese (Smash) Burgers:

  • 16 oz (1lb) grassfed chuck (beef)
  • 1 tbsp butter
  • 1 tbsp The W Sauce or Worcestershire Sauce
  • Salt, pepper to taste

Wedge Salad:

  • 1 head iceberg lettuce
  • 1 pint cherry tomatoes
  • 6 strips of cooked bacon- chopped
  • ½ cup blue cheese crumbles
  • ¼ cup blue cheese dressing (recipe above)

Instructions
