Gorgonzola Thyme Stuffed Pork Chops with Bourbon Grilled Apples

Description

A sweet and savory way to enjoy Smithfield pork chops- stuffed with gorgonzola, thyme, walnuts and dried cherries.


Ingredients

  • 4 Smithfield Brown Sugar Boneless Center Cut Pork Chopsthese are available at select grocery stores and retailers nationwide, including: Walmart, ShopRite, Food Lion, Publix, Albertson’s/Safeway and Save a Lot.
  • 2 tbsp gorgonzola
  • 2 tbsp chopped walnuts
  • 2 tbsp chopped dried cherries
  • 2 tbsp fresh thyme
  • toothpicks

Grilled Bourbon Apples:

  • 4 apples, sliced with seeds removed
  • dash cinnamon
  • 1 tbsp maple syrup
  • 2 tbsp bourbon

Instructions

Prepare your grill direct for heat grilling at 350-400 degrees. While the grill is heating up, go ahead and mix your gorgonzola, walnuts, cherries and thyme.

Take a very sharp knife and cut a slit into the pork chops where the stuffing will go, using your finger to expand the opening. Stuff the pork chops with the cheese mixture and use a tooth pick to secure the opening so the stuffing doesn’t come out while grilling.

Next, cut your apples. Combine the maple syrup and bourbon together in a cup. Sprinkle the apples with the cinnamon and then drizzle the maple bourbon syrup on top of the apples.

Oil your grates with a high heat oil like avocado oil or vegetable oil so your food doesn’t stick to the grill grates. Grill the pork chops on direct heat, flipping halfway through, until the internal temp reaches 140 degrees with an internal read thermometer, this should take about 5-8 minutes depending on your grill. While grilling the pork chops, add the apple slices and let them grill until they develop char marks and have begun to caramelize on the grill.

Once the pork chops have reached an internal temp of 140 degrees, pull them off the grill (they will continue to cook and reach 145 degrees after removed from the grill). Let them rest under foil for 5 minutes.

Serve the pork chops with the grilled apples for sweet-salty pork pairing perfection!
