Desserts with grilled pineapple are just what the summer ordered. With the heat we’ve been having there is no way I’m turning my oven on, but there is no way I can pass up on dessert either!
Luckily, this summer dessert doesn’t require an oven — you can make an amazing treat right on the grill! This no-fuss recipe is more about assembling items together and layering on flavors.

You can top this dessert with whipped cream or even ice cream, but I love mascarpone cheese and always have it on hand. The texture is similar to cream cheese but more spreadable; the flavor is pretty mellow and it takes on the flavor of whatever you add in it. In this case, juicy and smoky pineapple.
My favorite add-in for mascarpone is simply a few swirls of honey. It’s magic on toast (and actually has less calories than butter!)

Ingredients
- Frozen pound cake
- 1 fresh pineapple sliced thick — either in wedges or in circles
- 4-5 tbsp mascarpone cheese
- 1 tsp of honey
- ¼ tsp of vanilla extract
- A few sprinkles of cinnamon and nutmeg
Instructions
- While your pound cake is still frozen cut it in thick slices at least 2 inches thick.
- Place the cake on the grill in indirect heat. You'll need about 3 to 4 minutes per side just so it can defrost and get some grill marks.
- On the other half of your grill add your pineapple slices onto direct grill. Grill for about 2 minutes per side — you definitely want some char on them as this helps caramelize the pineapple and adds tons more flavor.
- In a large bowl, spread the mascarpone cheese and drizzle on some honey and add the vanilla extract, cinnamon and nutmeg. The honey will not only add tons of flavor but make the cheese softer and easier to spread.
- Once everything is grilled top the pound cake with the grilled pineapple and a dollop of the honey mascarpone spread.
- Drizzle with a little extra honey and enjoy!
This sounds so delicious! Really exotic and perfect dessert for Barbecue nights. Would you recommend this recipe even for barbecue fired with coal or only gas. I ask you because I am afraid coals would influence the flavor?
HI Ben, I personally think over charcoal is ALWAYS better flavor but this would work over gas too.
