Mango Ginger Popsicles

  • 4 ripe mangos, fruit removed from the core
  • 1/4 cup water
  • 1 (heaping) tbsp grated ginger root


Peel the mango and remove the fruit from the core. Put into a food processor and then add the ginger and the water. Pulse in the food processor until a uniform consistency (about a minute). Pour into Popsicle molds (I bought mine for less than $20) and put into the freezer until frozen solid. These are great when they’ve thawed a minute or two before eating to let the fruit get a little soft. 🙂
