Ingredients
- 3 tbsp soy sauce
- 3–4 tbsp Sriracha sauce
- 2 tbsp Worcestershire sauce
- 2–3 cloves garlic
- 2 tbsp green onions
- 3 tbsp smooth peanut butter
- I lime
- I tbsp Dijon mustard
- Enough wings to feed you and your friends (this recipe makes about 12 wings)
Instructions
The Marinade:
Chop up your green onions and garlic. You can substitute pre-minced garlic if you’re in a time crunch, but I recommend using fresh ingredients whenever possible. Mix the green onions and garlic together in a medium bowl with soy sauce, Sriracha sauce, Worcestshire sauce, Dijon mustard, and lime juice, and taste to get the flavor you want (for example, if you like your food really spicy, you might want to go a little heavier on the Sriracha). Next, add peanut butter to the marinade and stir until smooth.
Once you’ve gotten the marinade to your liking, soak your chicken wings in it for about an hour. This should be enough time to let them really absorb the sweet, delicious goodness and keep it while they’re being cooked.
The Grill:
Get your grill up to a medium heat (about 350 degrees—you should be able to hover your hand about 4-5 inches above the grill for 6-7 seconds before it gets too hot to keep it there). Wrap your chicken wings up in greased tin foil—this will really help seal in the flavor. Place the chicken in the tin foil on the grill for about 14 minutes (flip after the first 7 minutes) and then cook the chicken directly on the grill for another 5 minutes. How well-done your chicken is comes down to your preference, but you definitely don’t want it to be undercooked for obvious reasons.
