- 1 spiral cut ham, about 7 lbs
- 4 tbsp Sunshine State of Mind Craft BBQ Rub
- 2 tsp nutmeg
- 2 tbsp brown sugar
- 1 tsp paprika
Bourbon Glaze
- 1 cup bourbon
- 1/3 cup brown sugar
- ½ cup fig preserves
- 2 tbsp Worcestershire sauce
- 2 tbsp orange juice
- 2 tbsp minced garlic
- 1 tbsp mustard
- salt and pepper to taste
optional ingredients:
- ¼ cup white vinegar
- 2 tbsp hot sauce
Instructions
Ham Directions:
- In a small bowl, combine Sunshine State of Mind with nutmeg, brown sugar, and paprika.
- Cover the ham in the rub liberally, being sure to get it into the spiral cuts
- Place ham into a cast iron skillet or foil pan and place onto the grill
- Cook the ham until internal temperature reaches 90 degrees, then coat with half the glaze
- Continue cooking then coat with the remaining glaze once it hits 100 degrees
- Once it has reached 140, pull it off the grill and enjoy
Glaze Directions:
- Put the whisky in a heavy bottomed pan and reduce by half
- Add all other ingredients to the pan and whisk together until combined
- Reduce glaze until it has reached desired thickness, I usually bring to a boil then reduce to a simmer for 10 minutes
