Grilled Butternut Squash Salad

Is there anything better than the flavors Fall offers? For me its my ultimate favorite time of year – it’s a prelude to a lineup of wonderful things like the holidays and extra time with family and friends and not to mention FOOD!

This Grilled Butternut Salad is amazing as a side or as an entire meal {we added some grilled skirt steak when we made this last week} or even as a fabulous Tailgating option.

This salad holds up well and is very easy to assemble making it a game-day must-have. I love that it’s a healthy alternative and a great way to get some greens in.

Ingredients:

1 butternut squash cut in rectangles or thick slices

1/2 a red onion

Olive Oil

Salt + Pepper to taste

For the Greens:

Arugula

Walnuts

Sliced apples or pears

Blue Cheese Crumbles

Balsamic glaze {I’m a HUGE fan of Trader Joe’s brand!}

Directions:

Line a sheet pan or even a cast iron pan with olive oil and add your cut up butternut squash and salt/pepper to taste. Grill for about 20 minutes covered with foil. You want to kind of ‘steam’ these for a bit so they cook throughout.  About 10 minutes turn and check them, you are going to want to be able to stick a fork in it. Once they’re fully cooked remove the foil move over the medium head and add your red onions. The onions will caramelize and you’ll get some great char marks and tons of smoky flavor. Add in your sliced apples or pears for a few minutes so they can char up as well. Remove from the grill and set to the side. Now you prep you salad I like to keep it simple and used blue cheese and walnuts but dried cranberries and even toasted pumpkin seeds would be amazing. Add the grilled squash to the top of the salad, drizzle a little balsamic glaze and you are all set!
